This exquisite dipping sauce is crafted with carefully selected ingredients and time-honored techniques. We use only the finest aged and dried bonito flakes (katsuo hon karebushi), frigate tuna flakes (soda karebushi), and mackerel flakes (saba karebushi) – ingredients prized since the Edo period for soba dipping sauce. These are blended with "Honzen" extra-select soy sauce, pure rice sweet sake (mirin), and sugar, then aged to create our signature "kaeshi" base.
